We have been making small quantities of gin using all native ingredients (other than juniper of course) for a couple of years now and people are raving about it. It smells so much like the air of a national park after rain that you are transported there from the first sip. Robust flavours of finger lime, lemon myrtle, wattle seed and a hint of eucalyptus are a heavenly match for dry tonic water and a twist of blood orange. Your friends won’t have tasted anything like this before!
I think this is our most complex and intriguing pinot noir to date, from a tiny vineyard outside Warrnambool. It is fermented with 100% whole bunches giving the wine a smoky, brambly, spicy and wild edge, but it is underpinned by the most delicious, juicy, exotic red fruits. Not your average quaffer and a real conversation piece. Dazzling in youth but will develop some serious savoury complexity with age.
